I appreciate that not all kits can be demoed live but It would have been nice of you to show how the actual kit plays, and how well it works rather than editing the video post capture. Because the primary function of the kit is audio the viewers would like to see what they are getting :)

It is not definitive that the audio isn't coming from the kit but from my observations it would seem fairly likely... here are my reasons.
1. Bass reproduction of the small speaker shown in the video would not be any where near as good as heard in the video.. It would normally sound kind of "tinny"
2. Listening to the general quality of the audio in the vid its very good and rich in all frequencies. this at a minimum would require an external good quality microphone and not a built in microphone on a camera.
3. There is desynchronisation between the turning of the knob and the speed increase of the audio.there could be a delay between adjusting the knob and the audio changing but I would imagine it to stay constant whereas the delay varies throughout the video if you watch carefully.
Of course she could have connected the output of the kit to the direct input of the computer which would give good quality audio but I don't think this was done during the video, it would have been recorded previously and overlayed onto the video at a later time.
The main reason to edit the audio post capture was to make it look professional which it does, the music is clear as well as her voice it doesn't sound like it is in a large room with bckgnd noise.
Great shield. Is there a "lite" version of this? I just want to play back a single wav file, don't need to modify the sound, just need to keep the shield really light (in terms of weight). Thanks.
If I where go through the trouble of putting this in a cabinet, Id make so one could switch the pot, in or out of the circuit. Making a way to note the pot position so one can return to desired effect easily, wouldn't be a bad idea either. Yes I understand this was to be a basic demo video, I'm just tossing out options that came to mind.
