Nice to see the different options. I am having trouble with the consistency of my icing though. I get these "torn edge" looking petals, why is that? Is it too thick, too warm, or what?
@stratsgalore I've had it happen when my frosting is too dry but sometimes you can add more butter or shortening to help smooth it out. Don't add more liquid though, that doesn't fix this particular problem :)
I am so glad I got a cake decorating kit for my birthday, it came with 5 different tips, 12 piping bags, 4 different colors for frosting, and a cake nail (it's small, but I can make do since I'm a beginner)
what I do to get roses on my cake is after I make the rose I put the nail with the rose on it in the freezer for about 2 minutes and then you use the sissors to get it off then it's just balance :D
@Kcowan1000 The buttercream has to be a bit thicker so it holds on better. When my frosting is too thin the rose will fall off, that's where the insta-fridge comes in handy, it helps the buttercream thicken up.

It seems that the white roses you made they came out really nice and every frosting I make no matter how I follow the recipe it never works!!! So please if you don't mind could you please tell me what all the measurements of all the ingredients are, the steps of which they are made and if you can could you tell me how much the recipe makes? Like in cups? :) thanks
@abstopmotion your buttercream might be a little too soft. for making roses, the consistency of the buttercream should be stiff. try adding less water or milk next time you make the buttercream(:

@dKm4ebabe Well, there are other recipes out there that are shortening only and they won't melt. To my knowledge, that's the only kind of buttercream that you don't need anything else but it's a trade-off, workability for flavor.
The insta-fridge isn't something that takes work, you fill a pan, you keep it in the freezer, when it's time to do a cake you take it out, when you're done you put it back. No clean up necessary.
@dKm4ebabe And I understand that it's a time drain, I have 3 little ones that I homeschool in addition to keeping house and now and then making a cake. I've learned though to plan my time better, do things in shifts, get things done ahead of time so when the times comes to actually decorate the cake everything is in place and flows smoothly. Clean-up goes more quickly now too, it's all about finding the short-cuts without shortchanging yourself or your product.

Whenever I am making a rose on the flower nail I always cute out a square of parchment paper to make sliding it off the nail easier. For me it is a lot easier to use a spatula to get it off the parchment paper then using the scissor method.
mistakes are edible my mom and i loled! I don't have a stand mixer and i don't like to use my hand held mixer so i have to do it by had so my mistakes are a pain.
to me it looks like you gave your assistant intentionally difficult icing or something xD It looked way too thin to do a proper rose with. When I was doing Cake decorating it was my job to do all flowers, and sometimes the creeps I worked with would switch out my icing with icing that was thinned with corn syrup, and the roses drooped when I did them.
Also I prefer the nail method. But the rose you did in your method was very pretty.
lol-it WAS thin, she knew that before she started piping :) We were using the insta-fridge but didn't give the bags enough time to harden up.
Yeah, I like the nail now that I figured out that I can turn it clockwise! lol, Wilton's method was counter-clockwise and I never was very comfortable it :D

Don't add all the liquid. If it's hot and humid where you are only add 2-3 tbs. of cream at the beginning of the recipe then see how thick the frosting is once all the sugar is in. During the summer I usually don't need all the liquid I have listed in that recipe.
OF course now that I'm asked I can't find it!! I did a search through my music and it's telling me it's not there! ARGH, I'll let you know if I figure it out :)

when the rose fell upside down i did laugh out loud and my sister whose in the room looked at me and frowned, a BIG frown. id thought shed be used to it by now. i do it a lot.

when the rose fell upside down i did laugh out loud and my sister whose in the room looked at me and frowned, a BIG frown. id thought shed be used to it by now. i do it a lot.

Oh what a fabulous video, i giggled at the throwing frosting comment and laughed out loud at the upside down rose, its a shame because it was a lovley rose too!!!! Love all your videos! Think il try doing roses on a stick next time, to many issues with a nail lol!

Thanks so much for this rose class. I have been trying to make rose. I think the frosting is tooooo soft. also the angle is great. I just wish you were left handed. Most video on making butter cream roses are for right handed people. Thanks again I love all of your videos.

Awesome as always! Haven't we all had the perfect rose off the nail go "plop" on the cake?! I've never thought of tilting the nail!!! Gonna have to go try this now!

Wonderful work! You are so confident working with buttercream, as for me I am kind of scared and I dont know why. Yesterday I made my FIRST leaves out of buttercream and I was the happiest woman in the world, how silly!!! Great assistant, well done! :)
