It is best to store this in a dark jar. You don't want light getting to it while it matures...6 months is Maturity and I know people are using it a month later but true maturity is six months
@miked9372 Well I certainly didn't ask for your opinion. My opinion is the fact that I don't want to wait 12 months just for some stupid extract. It's not very convenient. Also, why go to the store and buy some when all I SEE in the comments is "storebought vanilla extract is artificial and shit!" If I WANT to make something homemade, why wait most of my life for it? So if I want to bake cookies for a bake sale, I have to wait a year? STUPID!
a lot of people commenting here do not understand the difference between REAL vanilla extract and the imitation vanilla crap that you can buy for a dollar. The imitation crap has synthetic artificial vanilla "flavoring"...not real vanilla whatsoever. The REAL vanilla extract is made exactly this way. Maybe some of you should read labels of products that you ingest.
I have made vanilla extract using vanilla beans and brandy and have reused the beans a couple of times. How many times can the vanilla beans be reused?
@asimov13647 well no one really knows, try to experiment but it may take years to get the result. try by once you have a good bottle of extract remove the beans and then place them in another bottle of the spirits you use and wait again, repeat until you get to a point where the vanilla wont give any color or aroma to the spirits
I think I get it: the vanilla beans are submerged in alcohol to preserve it and prevent bacteria from fermenting in it, right? since alcohol is sterile?
@bee5120 more or less. It's also that vodka doesn't taste much, so it keeps the vanilla beans hydrated as it is a liquid, and also takes the same taste of the spice. That's why the longer you wait the stronger it gets. :)

@cutelove415 Usually you put things like vanilla extract in baking stuff, so the alcohol actually cooks out.

@bee5120 well, yes, but also, alcohol extracts and captures flavors very well.
