A friend of mine gave me my 5.7, it is an Awesome gun. Hopefully the price of ammunition will come down as it's an expensive range gun. I'm soon to get my CHL and will probably use this weapon as my carry gun.

Captain- 40 S&W passed 9mm as the most issued police service round in the U.S. some time ago. 5.7 was originally designed by FN to meet a NATO PDW requirement to defeat WARSAW PACT nations ceramic plate body armor at 100m.
It used a steel core or aluminum core to defeat armor, After armor terminal effects were considered secondary. Having shot 2 feral dogs w/ FN ammo I can tell you it penetrates plenty.

Why do you want a handgun round to penetrate that many phone books. If its penetrating phone books that much what is it doing in a self defense situation? Prob blowing through target and hitting unintended targets.
I did watch and one of the biggest complaints by law enforcement that caused a switch from 9mm to .40S&W was the excessive penetration of the round. Even one inch in phone books is gonna be way more than you want compared to a round already deemed "over penetrating"
There has been no "switch" as 9mm is still the most used LE service caliber.
Excessive penetration is largely a factor of bullet design not caliber (all else being equal). 9mm FMJ bullets along with 40,45,357 all over-penetrate where HP bullets are less prone to do so. That is actually the origin of the HP as a "safety bullet" and is how they were marketed. A 9mm FMJ will zip right through a human torso while a HP is far less likely.
5.7mm was designed to yaw (ala 5.56) and limit penetration.
WWB and Blazer Brass are not comparable to premium self-defense loads, it's simply cheap plinking ammunition. GoldDot, Hydrashok, Partition, GoldenSaber, etc are all comparable to FN's loads which are all mil-spec/premium loads.
It's a comparison between two duty/self-defense loads ie apples to apples, personally I carry what I practice with and practice with what I carry.
You stated that practicing with the Fiveseven is not 'afordable' yet by your own admission ($9.50 per box of 50) practicing with FN duty ammunition only costs $3.00 more. If a person can't afford an extra 60 bucks per thousand rounds of practice they shouldn't have bought a $1,000+ pistol.

As far as I know, the AP rounds were never sold to civilians. AS FAR AS I KNOW.
There is an AP round made for it though. Some of the early rounds were called light armor piercing-it had something to do with the core. Those are not made anymore.
ERr phonebooks when you dont have a huge budget aren't a bad analog. They do demostrate effectively how expansion works, though they are quite dense. Still a wet phonebook versus a human body that's 70 percent water. You know what, I think it's an acceptable analog in an informal test. I liked this video alot, thanks for making it and I was very curious about the stopping power of the 5.7 round.

This was a comparison of high velocity projectiles in like media, the results of which actually mirror that of tests done in gel to a similar percentage.
This is due to the fact that water volume by weight is less than that of gel (meaning that wet pulp is a bit more dense than gel) and so the rounds penetrate slightly less.
wet phonebooks are not a valid test media to represent tissue, but the video was groovy, if you are interested in valid testing methodology look up the IWBA protocols
he wasn't making this this video to demonstrate how great phonebooks are as a ballistic media...the point of the test was to compare the rounds...and if the rounds are both shot into a phone book and one shows a tendency to expand or penetrate batter than another within the same material, it is a valid test

Apparently you didn't watch the video, it penetrated only about 1" further than the expanded 9mm.
5.7x28mm is designed specifically to not over-penetrate.

I have always believed that well placed shots are more important then choice of caliber.
an average person can easily afford to become a very good shot with a 9mm.
Where as the five seven is not as available, or affordable.

SS195/197 typically costs 25-50 cents per round
9mm SD loads typically costs 30-75 cents per round
9mm has been largely sold out or severely limited out at most distributors while 5.7 has been and is in stock with FN cranking up production.

As far as I know, the AP rounds were never sold to civilians. AS FAR AS I KNOW.
