He poured a pineapple puree over the pork, since pineapple has sugar it in it burns more easily but the nasty burned flavor isnt there but instead its called channelization. and the chef used pineapple to tenderize the meat.
Really. I tend to grill and smoke various things, and when I grill pineapple, which was one of the main things Sakai put on the pork, I like to get a nice char on it. It does tend to look much worse than it tastes.

i like a bit of char on certain foods.
like grilled bread or grilled meat.
even when i make fried eggs, i like it a bit on the brown side instead of just white. makes it less slimy and more crunchy :)
