Does the "two color exclusion" method work with more than 2 colors if you just repeat that method over? Say I was trying to select four colors, would it work?

You know out of the thre ways that i've attempted color exclusion, the histiry brush strategy was better. the only con with it is that you can't erase if you over paint, you would have to start over. this type of exclusion is only good for if you want only one color in it or one color out.
its better if you, make a copy of the picture and for the cop layer use gradient map and pick black and white. Than use your magic easier on the one u want color. These is just erasing the the b/w and showing the background picture that has color. I do these.
OR Use a Black and White Gradient Map and use the LAYER MASK to reaveal / conceal colors in a photo. This way you can also invert your mask and get the opposite effect, if desired.
hey at the end of each when you said to desaturate it... its probably better to go to photo filter put the color to black, and adjust the slider. i think that would be much better for different levels

an even better way to do this is to create a new hue/saturation adjustment layer and set the saturation to 0. then create a layer mask and paint with black everywhere where you want colour. this is fast, and you can choose where u want all the colour or just half of the colour (draw with a grey instead of black on the layer mask). nice tut anyway.
Maybe you could also press Ctrl-J to make a new layer out of the selection and desaturate the original? That way, you have a lot more control on what the blue looks like, you could add effects, etc.
Photoshop 7 will give good value for your dollar. They say version 8/9 is only about 5% better than 7 when it comes to the filters and such. And version 10 is just a resource hog.

Help....after selecting the second color, when i click ok it says no pixels selected. Im frustrated....what am i doin wrong?

Hi. First you have to press control-D if you're on a PC. Then you can do the other colour. Hope this helps :)

I've seen a much easier way of doing it.
This way is a bit more meticulous, but it comes out cleaner.

I would agree. If you're a beginner, Photoshop 7 is fine. Even for advanced users, the new CS versions aren't much of an upgrade.
