If the solution was vineger (3parts) and water (1part) then the acid in the vinegar will prevent any wrong thing from happening. We took to pressure canning this year - such a time consuming task. The reward is great tho. If done right vegetables are already cooked when you get them out of the jar down the road. They also last almost forever. I just ate some apple butter that was over 11 years old. Tasted great & no trips to the doctor.
@jrwinn32 also, my family has used the water bath method dating back forever.. its completely fine to do it the way you showed in your video.. i like the dab of hot sauce you put on the okra before boiling the jars.. i'm gonna try that next time..

SurfinSapo, you really should be using a pressure canner/cooker. Only tomatoes (whole, sliced, chopped, or sauced) can be canned safely using the water bath method. This is due to the high acidity of tomatoes.
Your suppose to use a pressure cooker. Boiling will give you enought heat to kill good bacteria that would aid in pickling, but it wont kill botulism inducing bacteria, ecoli, or salmonella. If really want to pickle dont heat the jars at all. The salt brine is all you need but the good bacteria will produce a different taste. otherwise you REALLY REALLY need to be using a pressure cooker. The food looks great by the way.
now i know how to pickle okra im going to start pickling stuff i bet it could make carrots taste awesome flavor exPLOsion jalaninos LOADS of them hot red pepper chips a small tiny bit o sundried tomato and make water red from louisiana hot sauce throw some sausage in there for space filler lol this picling thing is pure genius
U should not can outside, the drafts can break your bottles when your cooling them down on the table. now if i can just find your other vid of U eating the goodies!

Looks pretty good. As long as your lids seal after boiling (hint..turn your jars over as they cool) there is no need to refrigerate. BUT..if they are not sealed correctly, you better put 'em in the old ice box or your gonna be one sick puppy...LOL.
Anyhow, I just pickled me up some quail eggs..then a batch of snap beans w/ smoked sausages. Now that stuff was HOT...,probably could light a fleas fart on fire.
thanks for the play by play sapo. i improvised on my a little bit. i put in some dill and minced garic with some pickle seasoning i picked up from the store. i threw in a jalapeno during the boiling process just for good measure. ill let you know how it turns out in a couple of weeks!
Great video Sapo! If you have fresh peppers you should look up jelly recipes. My brother makes a hab pineapple thats great as a marinade, to hot for me to eat on toast.
