  • SLOW-COOKER BURRITOS 2 c. diced onion 1 1/2 lbs chicken thighs 1 can diced tomatoes, Mexi style 1 can stewed tomatoes, Mexi style 1 can diced green chiles 1 can black beans, drained and rinsed 1 can kidney beans, drained and rinsed 1 tsp cumin 1 tsp salt 1/4 tsp black pepper 1/4 tsp cayenne pepper 2 c. rice Sprinkle spices on chicken and place in pot. Add onion, tomato, chile. Cook on high 3 hrs. Stir in remaining ing. and cook 1 more hour. Garnish w/cilantro, sour cream. Serve w/tortillas.
