What is the brand name for this machine? I am also curious about how much it costs, too. This video is beyond cool. I'd love to get a machine like it, if I could find it somewhere or find something similar...
@Biklar@maliolani This is a National - it was 25 or 30 years ago when we got it, so unfortunately I don't remember how much it cost. But it was a lot at the time for an appliance. There's a Tiger brand mochi making machine listed on amazon.com for $260, and I'll bet the larger Japanese specialty stores like Marukai would have them available as well. (I'm pretty sure Zojirushi makes one...) Unfortunately these are sealed units nowadays, so you don't get the entertainment...
We just bought a Tiger mochi making machine that steams the glutinous rice and then "pounds" it with an impeller. But there is no instruction on when to add sugar. Does anyone know? Also, the cooked rice came out too dry for the "pounding" to work properly, so it became dry and with grains of unmixed rice in it. Seems it needs more water.
@maliolani We've never added sugar - but hopefully someone else might know? I'll see if the instructions for my mom's machine specify when to put it in.
@sagetta1 This is an oooooold National - I'm not even sure National makes mochi machines any more, but Tiger and Zojirushi do. amazon.com used to have them available - I would check at Japanese/Asian speciality shops in your area.
@DirugazeXD I think the recipe book that came with the machine had recipes for sweet mochi, but the timing of the addition was crucial. This is an older machine - I'd bet the newer ones could handle it.
@gdiggle123 Hi @gdiggle123! It doesn't vibrate, but there's a small part called an impeller at the bottom of the cooking bowl that spins to simulate a kneading/pounding action that turns the rice into dough. My mom's machine is over 25 years old - I don't know if the new machines have the same mechanism.
YUM!!!! i LOVE mochi-my grandma bakes mochi on the wood stove first thing in the morning before I go out fishing and I eat it with just a little bit of shoyu...keeps me going all day
@victoriaslame Hi victoriaslame! Just blending the rice won't work. This is special extra-glutinous rice that turns into a sticky dough when worked like this. A long time ago, the rice was pounded by hand by men with huge mallets. The machine duplicates this action much more efficiently...
@KoisuruMarionnette You use a special extra-glutinous rice - I believe mochi flour is available as well - and I've known people who've made mochi using this and hot water (recipes are available online).
Very interestihg to watch! Just purchased mochi for the first time. It tasted good and had an unusal texture to it so that is why I decided to look it up to see how it is made. Never knew there was such a thing as the machine used in this video. Thanks for sharing
@rumpole33 I'm sorry I don't know - I wasn't even a teenager when we got it. But they are now available from several different North American online retailers with many more features than this one - except unfortunately current models are sealed so you can't watch the "break-dancing" rice!
See it wiggle, see it jiggle....
