He needs to watch a segment on how to make a video. When he's folding his dough he takes it up and out of the view of the camera. I am a cook and can say that this guys methods are not what is typically used in the industry. Poor videos, poor execution, far from what I would consider an expert. He knows more then the neophyte, but not yet an expert. Pleasant guy though, just needs to work on his presentation and demonstration skills.
Way to complicated. I make rye bread - NO KNEADING and nowhere near the complexity shown here. A few simple foldovers and shaping into a ball - stick it in a cast iron pan with a lid and bake for a half hour at 450 degrees. I've watched these videos - It could take several hours to make bread this way.
hahaha this guys hilarious! Im not sure he's ever made bread before but check his other rye bread videos for a laugh! I love the bit when he stabs his fingers into the dough! Genius! Find another video on how to knead dough, you'll learn nothing here
This video is terrible on so many levels. I cannot believe this guy has the audacity call himself an "expert"; his is completely lacking of any skills. This video should be retitled "Massacred Bread Dough"
Fairly informative for shaping the bread, however it would have been nicer if he had held the bread under the camera at all times instead of lifting it out of the camera's view while shaping.
