Taste was good. The Sidamo was roasted by a local Bellingham, WA company. It wasn't "the best cup of brewed" I've ever had, but again, it was good. The brew method produces a really clean cup, although some thermo syphon brewers use a glass rod filter, this shop uses a cotton pad, which allowed zero coffee depris. I acutally like some sediment in my cup (as you get from a coffee press or thermosyphon with a glass rod). After tasting its clear that this brew method is showy / romantic to watch...
