@garycalgary i think they're given a list of possible secret ingredients before hand so they can think of possible dishes, but they don't know which one on the list is the actual secret ingredient.

@garycalgary It's edited out in the actual show, but after they show the secret ingredient, they give the chefs 15 minutes for planning. Then the hour begins.

@garycalgary They know... kinda : it's been written that they are told in advance about three possible secret ingredient. So they do have a game plan. But really the level of cooking there is insane and 5 dishes of that level in so little time....

This is my favorite episode of Iron Chef America (other than the cranberry one wit Rachel Ray). I kid you not, I want to make every single item that was made. And all the chefs were a riot!!! Paula Deen is the sweetest lady in the world and a hero of mine cause she believed in her own dream. The playfulness between all of them, especially Paula & Robert. And who know Robert was a hunk?!
