Just made this. I substituted corn for white and green onion. i also tossed the pork in Chili Powder before frying it. All in all, I think it turned out great.

To further add - You can use Brown Rice and no soy sauce if you have food allergies. Frozen vegetables can be used as well! :D

Some Chinese joints marinade the pork first. The red is just the food coloring in the maranade.

Can I substitute chopped onion for the celery? I'm not a huge fan of celery.
Most of the chinese restaurants I've been to also put been sprouts in, which I think are pretty good. I'll try this and add some in for fun.

The art of making good fried rice is to keep the moisture down otherwise the dish will be too stodgy.
