  • Just made this. I substituted corn for white and green onion.  i also tossed the pork in Chili Powder before frying it. All in all, I think it turned out great.

  • i gotta make my own recipie and put it on video. i think my fried rice is the best fried rice in youtube and in the world, but itkman's recipie is the best one i have seen of all the fried rice videos and the easiest one to make. me, i like to add a tablespoon of bean sauce it gives it a nice taste and color. great recipie ITKMAN i am a big fan of your cooking.

  • To further add - You can use Brown Rice and no soy sauce if you have food allergies. Frozen vegetables can be used as well! :D

  • I modified this recipe a little bit.. I did chicken fried rice for my girlfriend on Saturday and it was amazing!! I highly recommend a wok for this too.. I used a stainless steel frying pan and it was hard to work with it. None the less, great recipe and lots of room to experiment.

  • well actually when i add pork to fried rice i mix the pork with soy sauce before cooking it and it gives it a better color than during cooking

  • Yes, it is made with molasses. This also makes the sauce "thicker", richer, and lends a darker color to the rice. Because there is a subtle sweetness, you may also wish to add the thin (light) soy for a wheat/salt flavor - or the (dark) soy - which is fermented with mushrooms and the traditional wheat/salt flavor.

  • Some Chinese joints marinade the pork first. The red is just the food coloring in the maranade.

  • Can I substitute chopped onion for the celery? I'm not a huge fan of celery.

    Most of the chinese restaurants I've been to also put been sprouts in, which I think are pretty good. I'll try this and add some in for fun.

  • soy is salty, black soy is not very salty but it gives a darker colour when u add it

  • The light soy is using for marinade / seasoning.

    The black soy sauce is for rice and so on..

    One thing I do notice is that you use "Sugar" in all your food. Do you think subsituting white sugar with Agave Nectar will be ok?
