The way I hear the story, CB&C is actually an Irish-American invention, developed by 19th century immigrants, who, being urban tenement dwellers, didn't have ready access to the side of bacon that was the traditional foundation of the dish in Ireland, so they used corned beef instead, inspired by their Jewish neighbors. (Of course, I'm open to correction if I've gotten my facts wrong) :-)
