Why is the title 6 Kyu, the video states 5th and I also don't think there is a 6th Kyu. This applies to other videos as well.

there is sixth kyu, where does it state 5th? and by the way it depends on the dojo, and the association wether there is sixth kyu, but i guess this is generally the first rank you can get.

Hello, I have a doubt regarding the application of the technique. Why when Uke is going to grab Nage, uke makes a step to his right? I've seen how some Nages make a step to the left so they can do the technique with more ease

He is doing the 'omote' (=front/forward) version of the technique. If he had stepped left, he would have gone behind his opponent's back and that would be the 'ura'(=back) version of it (he would also have to pull him to the ground while turning).
