I had the polenta flour in my kitchen and was just looking for any generic video to teach me how to make it the best way possible but it was just so charming that I needed to comment, guys. Good video and easy to follow. To answer a couple of comments: I was born and lived about 90km SW of Rome and my mother did make Polenta hence not a uniquely Northern dish. This video shows the plain jane variety and therefore blend but once you master the process you can add mushrooms to the sauce or make the Bolognese Polenta con uccelli but we can use quails instead. A nice touch is toward the end of the cooking process add slowly some already cooked cannellini beans, etc.
@trapperbt: yes, polenta is a traditional northern meal. I am not sure whether semolina is from the south, but it is widely used all over Italy. for example in Rome it is used to make "Gnocchi alla Romana"

Are you supposed to season the polenta at some point? If so, when? I was excited to try this, and look foreward to trying this again, perhaps with a litlle tweaking. Thanks for the vid!

The polenta itself is not supposed to be very salty, as the sauce and the parmisan are usually enough in terms of salt. I normally use a quite bland stock but if you want to add more salt then you should add it to the stock (or add an extra cube, if that's what you are using).

By all means you can grill them in the oven (I wouldn't try on an actual grill, the polenta might fall through).
I often choose the grill alternative myself, just lightly oil the surface of the polenta for extra crispness (but you don't have to)
