Near the end of The Fate Route Saber says something like "Yes, even the curse of Gae Bolg can't affect you Shirou" to Shirou. That is due him having Avalon in his body, and Avalon is an EX rank Nobel Phantasam, it can shit on Gae Bolg which from what i remember should be B rank. So yes Shirou is immune to Gae Bolg due a higher barrier type Nobel Phantasam is inside him.
