  • Thanks Betty! More Info for those it might help.

    * I used my electric oven eye a couple clicks past medium until the last heating when I lowered it to med, worked great, seemed it would take forever on low-medium.

    * The first scalding I pulled it at 160 deg F

    * The second I pulled it at about 210

    * I used a whisk to beat the eggs

    * I find it enjoyable if toasted with "Well bust my britches!" like my KY grandma used to say every christmas when we showed up

  • Betty, have you ever tried doing your boiled custard in the microwave oven. My older sister use to do hers that way, but not sure how to do it. I have done it the traditional way before, but the microwave method made it so easy and less likely to burn, etc.

  • Could you keep this hot in a crockpot for a few hours after you make it?

  • @muggleborn95 You could put it there for the purpose of storing it for a couple of hours. You should not turn the crock pot on, because the custard will curdle and not be of the correct consistency. However, you can keep the custard warm for awhile in the crock pot, just from its heat after being prepared.

  • @asuwish13 Yes, that would thicken it; I'm not sure that would give you exactly what you want for eclairs. Maybe you could look up a recipe for eclairs. I have not done them yet in bettyskitchen.

  • Hey Betty, I'm really enjoying all of your recipes, especially those that are typical to Kentucky. I live in England and here we eat custard ALL THE TIME with desserts like 'spotted dick' (I know, weird name), jam roly poly, or even just pies or a fruit crumble. Often people just buy custard in a tin but when you're making it from scratch it's great to use half milk with half cream. I've never seen anyone drink it from a glass over here but it looks delicious. Keep cooking!

  • Oh, I should have watched your video first, Betty! I had my Grandma's old recipe but the instructions weren't very clear. I let mine boil a bit and I have a few egg chunks. oops. It's still drinkable but now I know what it should look like, hehe. I'll probably make a new batch later.

  • Where I come from we eat custard with a spoon. I've never seen anyone drink it from a glass before, so that's quite interesting.

  • It's so sad that you lost your sister. My sister died in a car wreck on my 12th birthday. My ex-girlfriend died from ovarian cancer May of 2008. She would have enjoyed your videos. I use her cookbooks (she had hundreds) whenever I need cooking advice. Go to my channel and watch the video Tomi's House. You can see her cute place and many of her precious cookbooks. Loved the recipe btw. Hope to try it soon.

  • Looking tasty Betty. In the UK we don't normally drink the custard from a glass, but quite often we would cut up a banana (like the one you have in your fruit bowl) put it in a dish pour the custard over it and then eat it with a spoon.Nice recipe-we will be trying that one for sure!-Richard

  • Yes, it's thin, but if you chill it, it will set up and make great custard pudding.

    It is very much like eggnog, but it is thickened a bit.  If you want it as a drink, you need to drink it while it is warm. If you chill it, it is more like custard pudding.
