To the Danish spelling wizards, No it's not called One æbleskive, in that case it's called either one Aebleskive or one Ebleskive. There is no Æ in the english alphabet :)

Seriously, how could you expect anything other than that the recipires are going to differ a tiny bit from what you define as the "correct" way to cook them. After all, it has been a couple of years since the Danes settled in Solvang.

(We lost her on her 101st birthday last March.) This excellent video gave the detailed instructions I might have learned at my grandmother's side...but we always visited in the summertime! Danka!

Virtually ANY pancake or waffle recipe works just fine when making Aebleskiver, even something like Bisquick or Aunt Jemima mix! The only difference is the taste and texture of the final product.
I like using Alton Brown's pancake batter recipe! He uses separated eggs and buttermilk. And the Aebleskiver made with the batter are indeed nice and fluffy!

It's a solid ball of pancake, not hollow at all. As it is fried and is turned into a ball the liquid dough inside expands.

What is with this "Aebleskiver Mix"?
It isn't hard to make these from scratch. Actually separating the eggs and using buttermilk makes it SO much fluffier!
My grandma and I make them so much differently. :/

I like to make mine with the rind of one orange. It give a wonderful citrus flavor.
And for those that may be interested or not familiar, the village of Solvang is one of the best weekend retreats there is.
