For a vegan bent I made this with Pacific Organic no-chicken broth. (used only 6 cups instead of 8) Because I had only a Jalapeño on hand I used instead and it was enough kick. (I even de-seeded it) Lastly I used only half a can of coconut milk and even with my customizing of the recipe - it was fantastic! Hardy and satisfying. Thanks gardenyears!
