Only for the sailors to sit on. They provide for moe righting moment since they move the weight of the sailor further out from the center of the boat.
they serve the same purpose as a trapese harness, moving the weight of the sailor further out of the boat to keep it flat. a flat boat is a fast boat. the only thing giving it lift is the hydrofoils on the centreboard and rudder

you guys know nothing! the are Called skiff moths. they weiggh like 30 kilos all up and are made only of carbon fiber. and NO! if they were released so they could gain altitude they would go so high that they would crash down and you get cheezegrated on the stay wire going from like 40 k's to 0 instantly. so they have a altitude stabilizer
The boat seems extremely unstable when not foiling => no tacking. This instability makes it look much more like windsurfing rather than normal sailing...
to keep it foiling you basically gybe to take up wind, think its called gabbing, basically you just do a really huge and fast gybe and luff it up right after to keep the boat foiling
they are harder to sail without the foils because in a way they stabilize you. once your moving enough to foil, the lift the foils generate pushes you to the side you are leaning. thats one of the reasons these guys sail to windward with windward roll
these boats cannot point high upwind... but they certainly go fast.

@darraghtank They move the weight away from the fulcrum on the boat, which allows the boat to stay upright easier, it's basic mechanical advantage.

- once airborne - those things are holding you down
- they should be released so you can gain altitude
