I'm going to make this tonight as I have a bunch of left over corn tortillas from last nights Huevos Ranchero's (ChefTips - Chef Jason Hill's recipe). Along with that I had made his tomatillo sauce. I wonder if I could use the tomatillo sauce in place of the enchilada sauce?
I have the exact same kitchen chopper and I LOVE it!! After I brown my ground beef I put it in the chopper and turn it on until it is finely chopped. It is like taco bell's meat. I do that everytime a recipe calls for ground beef! Turns out great!
@xXDisneyFanChick1Xx No, I learned to cook from my mother. My studies were in the area of math, which I taught at the university level for 30 years. Cooking has always been my hobby.
@CMILLER0623 i haven't made this particular recipe with chicken, but I do have a chicken enchilada recipe in bettyskitchen; also, the king ranch chicken casserole is like a chicken enchilada casserole.
@bettyskitchen have you ever made a casserole, i'm not sure what it's called, i had a friend who used to make it, i know it had hasbrowns and a bunch of other stuff sprinkled with cornflakes.. it was soooo good, but, I can never find it... any ideas what i'm talking about? :)
I want to make a note, why do you put cooking spray in the dish? What I do? Is I put a little sauce at the bottom of the dish before I had the tortillas. So the sauce kinda acts like the cooking spray. The dish comes out great and the tortillas don't stick to the bottom when I do this?
Can this recipe be cut in half? Too big for me, I'm single person. BTW, where do you get your clothes? I've watched a few of your videos and I just love your attire. It's very upscale and very top drawer, very VOGUE! Thanks for this recipe.
@nemoryer Hi! Thanks for the sweet comment! Yes, you may cut the recipe in half--just use half of each ingredient, and it should come out fine. (I buy most of my clothes online at newport-news(dot)com.
Hi Betty, I read that someone posted that adding cinnamon in the meat sauce mixture would taste good. It does ; ) And dstflwr is right it does keep people trying to figure out what that taste is ; ) My friend makes really good chili and he adds cinnamon and he also had us all guessing what it was. It was SO good! You should try a dash of Cinnamon next time. I think you will love it ; )
Hi Betty, You mentioned that you had for dessert a applesauce cake. I have a secret confession lol I LOVE to watch that old 70's show "The Waltons" (yep, The Walton's" and they are always making applesauce cake. I've always wondered how that is made. Do you have a youtube showing how to make what you had for dessert? I'd love to see one. If not, can you do one? Pretty please? Thanks SO MUCH!
Authentic Mexican enchiladas have a little cinnamon in the meat sauce mixture. It really adds a lot of flavor. You should try it next time. You'll find people trying to figure out what that taste is.
@bettyskitchen Hey you can eat how large of a serving you want..you are in shape so it dont matter :-) Just curious do you like olives? I was wondering would that taste good to add olives on the top with the cheese on this dish? What do you think? I have a new passion now and thats cooking for myself ever since I started watching your videos ,,Keep it up!!
Hi! Thanks for your lovely comment! I think olives would be great in this casserole. I would add them to the main mixture, rather than the top. They might burn on the top--unless you plan to add the olives after the casserole is cooked, like adding jalapenos, sour cream, etc.
Nice, flattering lighting until about 0:17, when it gets too harsh. You are a cutie and you deserve good lighting. It need not be expensive or awfully fancy. Look into it a little and your videos will look even better. You do great videos, really, but a little extra attention to the lighting would make a biiiig difference. You really deserve it.
Great recipe by the way. Can't wait to try it for my Mom.
My Husband likes anything that has the word Mexican in it. So I will be making this for him. Thank you so much for all your time and effort you put out for us to learn and enjoy! Blessing to you and your family.
Thanks for your lovely compliments! I am glad that you are able to use some of my recipes! This enchilada casserole is one of my favorites--I hope your husband enjoys it!
No, I don't eat large portions of anything! I do try to display a large amount to let you see what the dish looks like, but I certainly don't eat all of it! Thanks for your comment!
Corn tortillas are hard to work with if you are planning to roll them up-this is a good alternative. When cooking Mexican I started about ten years ago using refried black beans (or whole black beans) and the spices that really make it are cumin and fresh cilantro.
I love cumin and fresh cilantro! My Mexican dishes are pretty Americanized, but I'm learning a little about ways to do things better and more easily! Thanks for your comment!
I have planned for dinner this week. I will try this tonight! ^^ Italian sausage with green pepper for tomorrow and ground beef straganoff for Thursday. Thank you, Betty! Hope you have a good night! :)
That's wonderful that you are trying these recipes. They are all good choices--quick and easy, and not expensive! Thanks for your support and encouragement!
Any time I make a full "Mexican" meal I have sour cream for putting a dollop on each individual's plate! It's great with tacos or any other Mexican-style food. Thanks for your comment!
That's a wonderful idea! I wish I had thought of that while I was making this video. I would have made a picture of it with sour cream and some jalapeno pepper slices! Thanks!
I love to cook food, but I really only eat small portions. When I finish shooting a video, I usually pass the plate over to my husband, and I just take a taste of everything to make sure it came out fine! Thanks for your compliment!
Hi Betty, I'll be making that dish for our family this week...and one to go to my daughters family as well. It looks really delicious. PS...You look like you eat JUST the right amount...I wish we all did (Ok..me).
You have got to be kidding me. Somebody commented on how much you eat? You are in amazing shape and are totally my hero. I am 29 and I can only hope to look half as good as you do when I am your age. From one southern girl to another Work it sister!!
Well, I get people saying I eat too much, and others saying I eat too little, so I'm just taking the average of those and think I'm doing okay! Thanks for your sweet comment!
I also make cornbread using mexicorn, diced canned jalapenos, and jiffy corn muffin mix. I have yet to meet anyone who doesn't love it. You should try it as it goes along beautifully with any mexican meal.
I plan to do Mexican cornbread soon. My recipe sounds something like yours--mine has some Cheddar cheese and sour cream, also. I haven't decided what I want to put it with--I'm thinking of a chili bean with Mexican meatball sort of thing. Thanks for your ideas!
Hi Gerald! Thanks for the great comment! My daughter picked up the plate for about a quarter at a yard sale, because I was using the same dishes over and over again!
Thanks! I will put salisbury steak on my "to-do" list, but my request list is very long, so it may be a while before I get to it! Thanks for the request!
I love the plum color shirt and jacket you have on :) I see your ready for the Fall. I am too. I can't wait for you to do some Thanksgiving sort of recipes :) Pumpkin and Sweet potato is my favorite :)
