  • I'm going to make this tonight as I have a bunch of left over corn tortillas from last nights Huevos Ranchero's (ChefTips - Chef Jason Hill's recipe). Along with that I had made his tomatillo sauce. I wonder if I could use the tomatillo sauce in place of the enchilada sauce?

  • I have the exact same kitchen chopper and I LOVE it!! After I brown my ground beef I put it in the chopper and turn it on until it is finely chopped. It is like taco bell's meat. I do that everytime a recipe calls for ground beef! Turns out great!

  • @bettyskitchen have you ever made a casserole, i'm not sure what it's called, i had a friend who used to make it, i know it had hasbrowns and a bunch of other stuff sprinkled with cornflakes.. it was soooo good, but, I can never find it... any ideas what i'm talking about? :)

  • mexican oregano is used alot in mexican food. its similar to italian. looks the same though.

  • I want to make a note, why do you put cooking spray in the dish? What I do? Is I put a little sauce at the bottom of the dish before I had the tortillas. So the sauce kinda acts like the cooking spray. The dish comes out great and the tortillas don't stick to the bottom when I do this?

  • Hi Betty, I read that someone posted that adding cinnamon in the meat sauce mixture would taste good. It does ; ) And dstflwr is right it does keep people trying to figure out what that taste is ; ) My friend makes really good chili and he adds cinnamon and he also had us all guessing what it was. It was SO good! You should try a dash of Cinnamon next time. I think you will love it ; )

  • Hi Betty, You mentioned that you had for dessert a applesauce cake. I have a secret confession lol I LOVE to watch that old 70's show "The Waltons" (yep, The Walton's" and they are always making applesauce cake. I've always wondered how that is made. Do you have a youtube showing how to make what you had for dessert? I'd love to see one. If not, can you do one? Pretty please? Thanks SO MUCH!

  • Authentic Mexican enchiladas have a little cinnamon in the meat sauce mixture. It really adds a lot of flavor. You should try it next time. You'll find people trying to figure out what that taste is.

  • Hello Betty, Love your videos. For this recipe, if I want to include cumin and cilantro, do I eliminate the oregano?

  • I would leave the oregano in; you might decrease the amount a bit. Oregano is good with Mexican-style dishes!

  • @bettyskitchen Hey you can eat how large of a serving you want..you are in shape so it dont matter :-) Just curious do you like olives? I was wondering would that taste good to add olives on the top with the cheese on this dish? What do you think? I have a new passion now and thats cooking for myself ever since I started watching your videos ,,Keep it up!!

  • Hi! Thanks for your lovely comment! I think olives would be great in this casserole. I would add them to the main mixture, rather than the top. They might burn on the top--unless you plan to add the olives after the casserole is cooked, like adding jalapenos, sour cream, etc.

  • Nice, flattering lighting until about 0:17, when it gets too harsh. You are a cutie and you deserve good lighting. It need not be expensive or awfully fancy. Look into it a little and your videos will look even better. You do great videos, really, but a little extra attention to the lighting would make a biiiig difference. You really deserve it.

    Great recipe by the way. Can't wait to try it for my Mom.

  • Corn tortillas are hard to work with if you are planning to roll them up-this is a good alternative. When cooking Mexican I started about ten years ago using refried black beans (or whole black beans) and the spices that really make it are cumin and fresh cilantro.

  • It's like an Mexican lasange?right. You know in Sweden we often eat tacos along with sourcream.I would use sourcream on the side of that casserole.

  • I also make cornbread using mexicorn, diced canned jalapenos, and jiffy corn muffin mix. I have yet to meet anyone who doesn't love it. You should try it as it goes along beautifully with any mexican meal.

  • I plan to do Mexican cornbread soon. My recipe sounds something like yours--mine has some Cheddar cheese and sour cream, also. I haven't decided what I want to put it with--I'm thinking of a chili bean with Mexican meatball sort of thing. Thanks for your ideas!
