  • You should try delicata squash. It's amazing. I buy the stuff as often as possible during the winter, and it's so good and sweet when roasted or baked, all it needs is a little sea salt and coarse-ground black pepper.

  • Made the zucchini pancake today, and it was fantastic! used: half a zucchini, 3 pinches of salt, 2 tbsp flour and half a tbsp of rape oil for frying in a nonstick pan! only 140 kcal for the counters ;)

  • @bigalisme Start chopping slowly and when you feel like doing faster, do it. Practice makes perfect. : )

  • When I tried to make this, it tasted good but it was not a pancake at all! The flour instantly changed to dough when I mixed it with the squash, so there was little pieces of dough mixed with the pancakes and when I cooked it, it wouldn't stay together at all! Any advice?

  • Like Maangchi said, press the pancake down with a spatula.

  • Oh yes, also your pan has to be hot before you start cooking the pancake, not really burning burning hot, though.

  • I just made this dish today, with my mum. Because we had let over zucchinis. It was so DELICIOUS!

    But we had put too much water, so we had to add more flour. It became quite thick batter, but it was still nice! Next time I need to remember to put less flour and water, so it can be extra crunchy! Thanks for the recipe <3

  • why is it that with the zucchini you have to put flour and the squash just salt?

  • The squash has a lot less water in it... it also has more inherent sugars. The salt draws out some of the water inside of the julienned squash. When it loses some water, it breaks down and softens slightly [but doesn't fall apart]. As a result, the threads will stick together. The salt draws out some of the water inside of the julienned squash, and also causes them to soften just slightly.

  • The Zucchini has a LOT more water in it, and not a lot of sugar. Without the stability that the batter provides, it won't form a pancake and just fall together.

  • amateur question : why does zucchini pancake needs ½ cup of flour, but squash needs only 3tbs?

  • Some kinds of squashes hold their form more than others. Butternut, like pumpkin, softens down as opposed to a zucchini, so you would need more batter to bind it together, I assume.

  • my guess would be squash gets mushy when you cook it so it will stay in shape

    Zucchini get gets soft so in need the flour to hold it together

  • the amount of water in the zucchini is more. need to absorb

  • and it is less starchy so it needs something to hold it togehter

  • i think there is too much water in a cucumber that it is not a good food to cook. usually cucumbers are eaten fresh, rarely cooked. I wouldnt recommend it. :/

  • cucumbers are not the same as zuchini at all. She's cooking with zuchini, not cucumber like you said.

  • pumpkin is a squash, same family of veggies. I dunno where you live but you should be able to find squash, if not then pumpkin will work. Just make sure you use larger pumpkins or it will taste more sweet. Either way should be tastey

  • I have always liked zucchini pancakes, my mom made this for me when I was a kid. We just put the onion and hot peppers right in with the zucchini, sometimes add a bit of leftover ground beef. Is a great recipe to use up random ingredients and is tasty! Dip in a mix of seasame seed oil, seasame seeds, and soy sauce. Love your costume, very cute - Kyon
