I use FRAPS and I don't think it comes with London South Coast addon. (I don't play MSTS anymore)

ive never heard the annoucements before are they at every station or something? and is this just free roam or an actual activity?

No the announcement comes on as soon as I start the scenario, you can here other announcements as you approach stations, eg at Clapham Junction: Platform 14 for the 14:21 Southern Service to London Victoria, calling at Battersea Park and London Victoria (The announcer is Phil Sayer)

Well the name of this game is called Microsoft Train Simulator and I use a program called fraps to record it.

Microsoft Train Sim is quite old now so I would recommend getting Kuju Rail Simulator or Rail works.
