    *If a musical background is an ABSOLUTE NECESSITY -

    --how about just some good, old fashioned, easy listening music?

    *Have had interesting discussions as to whether to cook stuffed peppers in:

    1) in the oven (I do), or

    2) on stove top in covered pan with small amount of water -

    --guess that is sort of steaming.

    * "Food for thought" - so to speak. ;-)

    Can you do this with yellow bell peppers or with other kinds of peppers?

    Sure, you can use any peppers that you like.

    I personally prefer the green bell peppers in this recipe.

  • Thanks freitasex, I am a novice when it comes to cooking but have made stuffed peppers a couple of times. I use a beef stroganoff type mixture and no tomatoes for a little change of pace. It works well, especially since I have kids that don't like tomato. Thanks again.

  • I can't wait to try this...however, I plan to cheat. I will use 1 to 2 packs of Uncle Bens 90 second spanish rice. I think I might use a leaner meat such as ground turkey or ground chicken. If I decide to incoporate some of the other things in the list, I will use brown or long-grain wild rice (still Uncle Bens 90 second stuff), fat free cheese, sea salt, light olive oil, lowsodium seasoning, and I might buy two packs of stop light peppers...for color and variety. Gettin' hungry already. -=80)

  • ha-ha! This is one of my earliest childhood memories: someone fed me green stuffed bell-peppers when I was like 4 or 5 and it was the best thing I'd ever tasted! (my parents fed me plain yogurt with granola and like avocado sandwiches & vegetarian stuff so) ha-ha! cool, I'll try this vege-style & report back later

  • Wow, I brought back an early memory for you, wow!

    May I suggest that if you make a vegetarian style.. to use a red or yellow bell pepper, but you can fix it the way you want to.

    Orzo would be good in a red pepper with some parmesan provided you have cheese in your diet and gosh what else... the possibilities are almost endless.

    that's what i call good comforting food!

    since it's hard to get good english cheddar here in germany (England is so close...duh!)

    i substituted it with german Emmentaler cheese, anyway, them babies turned out real fine!

    Very familiar here in germany and i think around the world, perfect to make in a dutch oven!

  • I used olive oil, but it does not matter what kind of oil that you use for the onions.

    Also, it was tomato sauce in a can both times.

  • Great recipe. I use my moms [passed on...fed 8 kids} I never had cheese in it though. I like to chop up some garlicky kielbasa to mix with the ground beef. I also like to keep the tops intact so the peppers have a little hat {it might rain} My mom always used undiluted Campbell's soup...the whole meal was yummy for all ten of us.

    What's the reason for boiling the green peppers by the way? Could I just stuff them raw and bake them with the cooked filling?

  • I boil them to soften them, they will never really cook in the oven if the boiling is not done and they will be crisp.

    I prefer mine soft and tender.

    This is a favorite of mine with mashed potatoes.

    I personally like green ones better for this, just love that green taste.

    To me red or yellow ones should be stuffed vegetarian style and serve them with a side dish.

    I would guess probably 40 minutes.

    I know that I would look at them every so often, and baked them till they were brown on top.

  • I don't know why, but I feel that it's a little more time consuming than I'd like it to be ...but it really isn't. So I tend to buy the STouffer's microwave ones. Those are really good, except that the outside of the bell peppers feel like plastic, so I sit and peel it off.. lol

    I stopped making these because, even though the filling was good the peppers were not. You have fired up my enthusiasm for stuffed peppers again.

    With stuffing from this recipe you should be able to cook famous italian savoy cabbage rolls called - Involtini Di Cavolo - tremendous meal. Involtini Di Cavolo recipe. Google it guys, you wont regret I promise.
