hey man, just a heads up: in my experience, a lack of oxygen in the early stages of the roast (ie. covering it with a pan) kills the flavors and causes a flatness in the body. i personally wouldn't recommend covering it until the first crack begins. this will also ensure the temp continues to rise throughout the roast so that it isn't baked instead of roasted.
