  • when u say cake flour u mean those flour u use to bake cake or do u mean rice flour?

  • i've just found your video recently and made the mantou for first time, very delicious,just like store brought. Love it. Thank you. But, i have a lot of dough starter left and now put it in the glass jar in the refrigerator. <My question is: my starter is now 3 days old, if i want to make mantou again, can i use it right away? OR, should i need to take it out and stay in room temperature first OR i heard people said you have to "feed" them first before using it again. Please teach me. Thanks.

    Please may I have that info - aobut feeding the starter-- too... the recipe I am currently following creates stiff mantous.... It doesn't use a starter however.

  • @middriftter Cake flour is lighter than all purpose flour. For this recipe you can substitute the cake flour by taking 1 1/2 cups of all purpose flour and removing 2 tbsps. Then add 2 tbsp of cornstarch and sift it together :)

  • @Incocoloo You can store it in the freezer if you're not going to use it for a while. But when you remove it, you have to let it defrost and then "feed" it and let it ferment. I'll send you a link through youtube mail that explains more on how to store it :)

  • @YaoMingLily It should be bubbly and liquidy. This is a dough starter, not the actual dough. The starter can be kept to be used in other breads and can be "fed" with flour which makes it thicker and easier to store if you wish :)

  • what is cake flour? does it containts bicarbonate soda?

  • Hi- The cake flour that I use here is "Swans Down" and on the box it states that it is "made from soft winter wheat and is sifted so that it is 27 times finer than all purpose flour.....it does not contain any leavening agent or salt."

    It's basically a lot finer and softer than regular all purpose flour and does not have bicarbonate soda or anything else added to it :)

  • You may be able to order it online. If not, you could simply use all purpose flour, although the texture may be slightly denser.

  • how do u count the flour by cup. how big is the cup? or can u tell me how many g izzit for the cake flour and purpose flour

  • A cup is the unit of measurement here in the US. Each ingredient has a different equivalent in grams b/c grams is weight and a cup is volume. I'll send u a link to a converter over youtube mail since I can't post links here :)

  • Can this dough be used for Japanese Nikuman? It seems almost identical.

  • This dough may be a little too soft. The dough for the barbecued pork buns (in my video list) would be perfect for the Nikuman :)

  • nice recipe - it is a not very often known recipe in home kitchens but is very rewarding because it can be used even to make very tasty home made pizzas too. Another thing to know about this, is that you can take off the bread or pizza final dough a 10/20% to preserve in the refrigerator to use it as a starter and make a better pizza or bread the next time, without even to add again the active yeast .

  • hi! I made a big mistake,, i think.

    instead of 1 1/2 tsp i added like almost a whole pack of instant yeast to it. and now in a about an hour it as has gotten about 3 times its original volume.. is this normal???

  • That's ok...you just had very immediately active yeast...but you can still use this in the same amount for your mantou :)

  • Why do you need to use a glass bowl? So it does not stick?

  • This is a great question - If you continue to let this starter ferment to use in other breads it's best to use glass because as it ferments it will react with metal or plastic :)

  • You must be of Northern Chinese decent, to call this mantou.

    My father used to make bao (the Cantonese way of saying steamed bread) with coconut filling on occasion. Good memories.

    Not that pork or red bean is bad.
