I think, but I'm not 100% sure, that eggs are in baked goods to hold the ingredients together. Having a kinda blue day, and really appreciate your upbeat energy!
Banana is a good replacement too for eggs when you are making cookies or pancakes :)

I guess there are many 'levels' of vegan or vegetarian. I have met 'vegetarians' who eat chicken and fish but not red meat.
