  • The interesting thing is that many middle easterners use the Greek word for beans.(Ancient Greek=φάσηλος(faselos),Modern φασόλι(fasoli).Weird.

  • You forgot the most important part of the process. First you must tie the lamb down onto a hot car roof and drive it through the streets for about an hour. Then you must cut it's achillies tendon so that it doesn't run away and for good measure, take 1 of it's eyes out with a knife whilst it's still alive to further prevent it from fleeing. Then inhumanely cut its throat. All this for stress free, low ph, open grained tender meat!

    The other one is too short and totally submersed in tomato sauce.

    We used to do it in a different way ,but this way looks Yummy :P

  • yes, when i had the list on screen, along with the tomato puree I usually chop some tomatoes and put them in then...just missed that one off hehe.

  • Can this recipe be done with any meat other then lamb? It is not exactly a highly isible meat around my piece of Iowa. Looks good though!

    With arabic cooking you'll find there are a gazillion versions of the same dish lol ..but i'm sure all so tasty : ]

  • There are a few things i do differently, at the beginng with the onion you can add a carrot - you remove them anyway as these draw out the bad tastes from the meat. Therefore removing the foam/scum is v.important too! ...and i forgot to take some shots at a few stages lol and where you see my seasoned meat - i usually put a LOT more on....and i dont even know what it is as a got it specially made from jordan, it makes the meat taste soo good though - eek, my secrets out!!

  • thanks for sharing about arabic culture & dish. This looked like a healthy dish. On otherhand, i don't eat pork too since it's unclean according to the Law of God & could harm the health. Never eaten a lamb before so i'm curious about it.

  • It is very healthy, i always use olive oil for everything as well. Some people use butter/ghee for the rice but everyone's different. Healthy but yet v.v. tasty : )
