To maintain a turn like that with a 109 and for that long, were you constantly trimming, setting combat flaps and/or pushing the rudder to the left, at the same time pushing the stick to the right to maintain the turn?
You basically said the all. I use trim wheels (x45 throttle) basically all the time so in turns I make most of small and some larger with trims. I do give the stick input all the time but much slighter range in long sustaining turns. Flaps I use also alot during these kind of fights especially when direction changes a lot. For the rudder input I give rudder to the turning direction and correct some of the "sinking" or near flop maneuvers with aireleons input to the opposite.
