  • @dnaslinky369 i have to disagree with the whole your job as a chef thing. the way in which you are know for preparing your food is unique. if your not clever enough to experiment with healthy subsitutes for butter than your just plain lazy. thats whats wrong with America. Thats why we have the fattest people in the world. Butter, gravy, dressing, fast food. Greasy unhealthy garbage.

  • @diehlhometheater - Have you ever eaten in England? Talk about heavy, fatty food. Lots of butter, gravy, salt etc. Its not what we eat in America, its our access to sheer mass quantities of food. Most countries have either limited space or limited climates to grow and cultivate a large variety of food. French cooking is loaded with fat, but the French simply eat less of it because its expensive to cultivate in large quantities.

  • @wirikuta14 - excessive BECAUSE of the access and the relative cheapness of prices of things compared to the rest of the world. When you're access is limited by either geographic location or climate you tend to not be excessive in your wants and needs. Take for example Japan. Access to beef is VERY limited so they don't each much of it, but access to cigarettes and alcohol is not and they are massive smokers an drinkers.

  • @diehlhometheater ya but see ur talking about something different... your saying specialty cooking like to create unique food, when people go to a restaurant you havto understand how to properly cook and create strong flavours. Unless someone has a special diet, when they want food they are looking for a good memorable meal, not how fatty this is. Nutritional cooking however is a trend now, it is what ppl look for but the job of the chef is to create good meals, regardless nutrition.

  • @diehlhometheater If cooking was just about substituting many things wouldnt be created,, puff pastry just one example, it just isnt the same without real butter. Also you cant just blame chefs or fatty foods for americas fat problem, people are in control of what they eat.. no one forces them to eat all these fat foods. They will always be present so it is up to the individual to resist the temptation and stay away from these foods.

  • @stealthballer Dear dipshit, I started off cooking for a steakhouse. Probably cooked more steaks in one week than you ever will in your life. Not trying to healthy up a steak. Stating an opinion. You can eat steak without butter and have it taste good. You can use steak as a flavour element to a dish as well. Take Pho Tai for example. I firmly believe that being from Amercia we need to change the way we eat. We need to look at other Countries and learn. Its disgracefull

  • @diehlhometheater I read all of your comments and you're right about how unhealthy most americans eat. But as a person from asia, i see absolutely nothing wrong with this steak. American obesity has more to do with lack of exercise than just eating more fat, at least based on what I've seen. You can eat just as "unhealthy" living in asia or anywhere else, but you'll be walking literally 200 times more than living in places like los angeles. And btw, you're wrong about rare beef being unhealthy.

  • Keep in mind, when he yells at those people in Hell's Kitchen - these are people who think they are qualified to run a top quality multi-million dollar restaurant. If they can't be perfect, they deserved to be yelled at. Watch his other shows, me doesn't do that. Even on "The F Word" when he's breaking in new chefs/cooks, he's harsh and rude but very effective.

  • *vaguely nauseated* Can anyone attest to how this works out? I've cooked steak with various condiments and garnishes before, but pooled oil and drenched with butter is a new one on me.

  • @mrovan I've done this, and I'm a complete moron when it comes to anything in the kitchen. This actually works, although I leave out the butter at the end. I use canola oil, and it honestly is not oily at all to me. Up to you to try it out, but it tastes great, especially when you don't have a grill to cook it on.

  • @mrovan A top recipe winners in a Texas Steak Cookoff: Chop up about half a head of garlic for 1-2 1/2 lb steaks. Mix with about 1/4 cup FRESHLY GROUND black pepper and 4 tbls butter, slightly softened. Smear all over steaks and allow to come to room temp for 15-20 minutes. Throw right in hot pan (just exactly the way Gordon shows here) and cook to your desired temp, topping with some of the pan juices. I do steaks other ways for health reasons, but this is still my favorite. It rocks!

  • @mrovan The hotter the oil, the less it gets absorbed by the cooking substance. It actually cooks the meat faster than it can get absorbed. The steak is seared beautifully on both sides and the fat has been made edible by warming and cooking it up. the butter doesnt burn in the pan because it mixes with the oil, and it actually helps heat the inside of the steak and helps cook the inner fat, adds creaminess, flavor, etc. if he didnt add butter, that rare steak probably would still had fat
