  • I didn't like hayashi rice before because I didn't like the weird aftertaste and texture that comes in a lot of the pre-packaged hayashi roux sets - but after watching this video I think I might begin to like hayashi rice. ^_^ but only if it's made by Chef!

  • It looks very nice but typically overdone in a Japanese overzealous attention to detail kind of way. Could simplify and miss out half the steps and you wouldn't really notice the difference. That said, i would love a wife like her. :D

  • @theuglykwan Methinks you don't cook very often if you think this is "overdone" and "overzealous". This is a fairly simple, no frills dish that pretty much require you just to dump things in a pan and mix it around. One of the things I like about Cooking with Dog is that they show you cutting and cooking techniques step by step. By all means if you know how to mince an onion like a pro, you don't need to do it like Chef does.

  • @fuuchan27 I've been a chef for many years and make complex dishes all the time. However, i highly doubt you would taste the difference if you missed out the roux step and just complicates what should be a simple recipe.

  • @theuglykwan If you've been a chef for many years then I'm sure you would know what the purpose of a dark roux is. Yes, you could probably substitute it for other techniques to add body and flavor and probably not miss it terribly, but if this is how hayashi rice is made traditionally, then who cares. It's like saying "making gumbo with roux is so fussy and zealous, you wouldn't miss it if you made the recipe simpler", that's not the point if you're going for authenticity.

  • @fuuchan27 I think she incorporated the roux in because it is common to buy roux to make this dish but if you are making it from scratch it is a redundant step. It's like when she makes curry with roux but she still adds in a whole lot of extra steps to the extent where she might as well just make the curry from scratch. I don't think it has anything to do with authenticity but just her quirk whereby she just makes work for herself.

  • @sschafi1 She uses a zoujirushi rice cooker. you can buy them online or maybe your local Asian store if your lucky.

  • This video had me quite literally drooling as I watched it. I will be trying this REALLY soon. Luckily I can get the thin beef slices from my local asian supermarket in the freezer - I don't trust myself to get the slices THAT thin... :)

  • @lashbear It's really easy. I have a little trick I use when I make yakiniku and other japanese dishes which require leaf-thin meat. Throw the meat in the freezer when you get home from the store and when it's frozen through, just thaw it to the point where you can cut it. You might have to use some force but it's much easier cutting half-frozen meat than cutting meat that's been thawed all the way through. Hope this helps :D

  • @Gimmiedesu While that is the technique used for making thin sliced meats in japan for hotpot purposes etc, for purposes such as these i'd suggest just using a sharp knife as freezing just removes nutrients.

  • @Silverfire6357 yes, it was! even making the roux was easy. The only "difficult thing" is cutting the vegetables, because it takes some time ;)

    Oh... And you should really look out and try to dissolve the roux thoroughly. I didn't do it properly and then we had some lumps of it in the sauce :D

  • Okay, so I made this meal the other night - didn't add the Worcestershire sauce or cream at the end, but doubled the recipe so I'd have more sauce. I loved the sauce BEFORE I added the Rue, but afterwards it just didn't taste right for some reason. I don't know.

  • YES!!! thank you! Always order hayashi rice at my local japanese restaurant, but when i looked it up it seems so hard to make at home, especially finding the demi-glace sauce!

    However you did it here with simple ingredients! thanks!

  • @wyc3 theres unsalted butter, if it bothers you that much.

  • @wyc3 Only if you use salted butter. There is such thing as unsalted butter, you know. This dish does seem a little heavy for everyday, but the amount of salt in the recipe is fairly miniscule, especially since ALL of it is done to taste. Don't like salt/cooking for a low-salt diet? Don't add as much.

  • @winterOST You should see what they put in the food you get when you go out to eat at a restaurant. You know why it doesn't taste like anything you'd make at home? Because they have no qualms about adding as much salt and butter as it takes to make it taste really really good.

  • I'm going to try this recipe tomorrow for dinner - has anyone else tried it yet? What is the flavor like? Is it more sweet (due to the honey and ketchup) or more savory or tomato-ish? Just not sure how it would end up, since it has ketchup in it but also has red wine and soy sauce. Also, will it make a huge difference if I omit the cream at the end?

  • @i2Bwitchy well, the one at my local restaurant, its creamy, but with a slight tomato sweet overtone, combined with the demi-glace it has like a smooth slight beef taste, but not like a gravy, the wine....well, my type you really don't taste the wine much, but its there.

    I guess if you miss out the cream, the flavour will be much stronger? and less, well less creamy! lol.

    Red wine is not just alcohol, after evaporate, the red wine aroma will stay in the dish.

  • @CmdrBittles after living in japan for 6 years i have learned that mayo, ketchup and what not is viewed differently the we do in the states. I.E. mayo on pizza and pasta dishes.....

  • when i moved to california for college i made rice in my rice cooker and told my roommates they could have some if they wanted. i remember one of them put a pat of butter in it and i was sooo confused. im hawaii born and asian as hell and never saw anyone ever put butter in their rice...BUT ITS SOOO GOOOOOOOD

  • There is a shorter (though not better) way to make this. You can skip the steps for making the brown paste, it can be substituted with regular cornstarch. It will have the same thickening effect. Also the beef does not need to be browned separately from the vegetables. You can brown it by cooking it last, before adding the ketchup etc...

    Sauce Yakisoba(Worcestershire sauce fried noodle) is very popular in japan.
