I agree! Gringos cooking TexMex is not really authentic Mexican food. The woman says "chili that you or I would eat with saltine crackers." Who is she referring too? White gringos or "normal people" who eat bland food? I never heard of saltine crackers being part of Southwest cuisine. Una loca!
The shredded cheese is orange and she calls it a Mexican blend. Hmm, authentic cheese in Mexico is white, not orange!! Gringos fixing nachos is not Mexican food, period.
Dice all ingredients,place in a pot with a teaspoon of oil warmed and cook.
3 or 4 corn tortillas fried place them on a plate.
2 ( I always have 3:) ) eggs sunny side or well done what ever you like place them on top of the tortillas and cover with the sauce, now you have Huevos Rancheros.

Do you know pork rinds?, warm up corn tortillas place small pieces of pork rinds and top with this salsa and roll your taco, radishes with salt and lime juice on the side this will stretch your budget.

Man, can you be any more wrong???
First of all the tortillas have to be fried
Second, you don't melt cheese
Third, you need to make the sauce that goes on top
Fourth, you don't put any of those things on top, this is are not enchiladas, lettuce? sour cream? guacamole? really? this are not tacos either...
