Can anyone tell me why the instructor looks through his skywatch toward the end of this clip. Humorous video but old Max must have been sore after some of those crashes.

I believe that the Skywatch is actually an inclinometer. Back then, you had to be sure you could make the glide to the LZ. This has been one of my favorite videos for years. This and SuperMax 2, of course! :-)
