@MrMisterMonsieur Even though I have not tasted EVERY beer or ale in Canada, I'd say you are right. They are great! They have a wide variety of very interesting brews. They also do not seem to try and just imitate, but are trying to do something unique and special. Bravo, Unibroue!
Trois Pistoles and La Fin du Monde are my two favourites. The Unibroue beer sommelier says TP goes well with desserts, in particular, chocolate-based ones like brownies. Beats having a coffee with your brownie, doesn't it?

I've only had 5 of Unibroue's products, all of which were excellent. La Fin du Monde is my favorite, but Ephemere is good if you are looking to break the apparent norm of different types of strong ales that they typically produce.
Keep appreciating good beer. I'm impressed by your taste and knowledge(ie, using a proper glass, among others).

I live in Chambly and tasted every Unibroue product, I think they are one of the best brewery in Canada!
