jeera is cummin seeds, and you can get a lot of info on this in wikipedia. hing is a gum. both are spicy flavourings used commonly in indian cookery. curry pak is a leaf from a tree that adds a flavour to most savoury dishes. if you eliminate them, your dish will taste good, but not spicy and flavourable . cheers ! :-)
@pentogram23 I think hing is what we call asafoetida. I can get it at the local health food store. I hope I'm not steering you wrong. It is a stinky spice (I keep mine double wrapped), until it hits the hot oil and then it is absolutely delicious.

yes, it is a very yummy curry ! do try it out, i think you'll find it worth the effort.. and the chilli paste adds just that kind of tang which cannot be got from any other "hottening'" spice .. and dont worry if it get a little more spicy that you normally like, just add a spoon or two of curds and this will subdue the chillies ..cheers ! :-)
