Hi Keith, I've noticed the theme amongst chefs are they use wine a lot in their recipes. I'm not much of an alcohol drinker so I'm completely in the dark here but what flavour does it add to the overal taste since you let the alcohol dissipate doesn't that negate the step altogether?

I will try this. Good basic chicken recipe. I'd use a stainless steel saute pan to create "fond" from the saute of chicken. I hate to see "teaching cooks" leave/use spatulas and steel spoons in nonstick pans. Ugh! Fingers on a chalk board.

i reccomed making you're own chicken stock. MY recipe for chicken stokc actually uses a whole fresh chicken excluding the breast meat and creates a much nicer stock than just using the carcus. The difference through using a chicken a whoe chicken from raw compared to a carcus is amazing. you just exclude the breast meat thats all. don't use store chicken stock if you can help it

ya..me too..usually it would have been..but beleive it or not..when we shot it..we had only a few minutes left on our hard drives..was trying to avoid waiting for the crew to dump footage to shoot that video...so I was rushing a bit..make yours thicker!

Nice recipe. But funny how you are not afraid to ad a lot of extra sodium in the shape of salt when you seem to be so aware of the sodium content of the chicken stock ;-)
