Latent homosexuality would be people that "are open to homosexual experience", which under the right circumstances the vast majority of people are, but do not engage in the behavior.

I'd have to do some digging to find the report but there was one study that measured genital arousal to heterosexual and homosexual pornography and came up with about the same 10% at both extremes and a spectrum in the middle.

Every time I've seen 3% it was from self reporting. Self reporting is problematic due to the stigma involved with being homosexual. For instance, in 1 survey of men in New York City over 12% of males had sex exclusively with other med, only 4% identified themselves as homosexual, the other 8% identified themselves as heterosexual. While one would expect homosexuality to be over repressed in New York City the point is that 2/3rds of men that were effectively homosexual said they weren't.

I think that you made weak arguments against this guy Friel and thus did not help the cause of rational thought. You should read Hitchens' "God is Not Great," as his points would give you much stronger arguments.

For example, in response to whether the Bible was written by humans, your point that it was written in human handwriting while true did not help Friel realize the error of his ways. Had you given him several quick examples of how the book could not have been written by a deity based on some of the points Hitchens makes, then you might cause him to take pause, at least internally.
