@Forylore the eggs are fish eggs but they are obviously not from sturgeon, while they are technically "caviar" they are no where near the price and flavor which sturgeon eggs gives off. i believe the type of eggs he is using is farmed flying fish eggs which is very popular, sustainable in Korea, Japan, and China, hopefully this answered some questions

@shuaiyu I think it is due to the size he cuts them, how sharp his knife is, and experience. My advice would be to sharpen your knife, it may be dull enough to pull on the stuffing. Hope that helps! ^-^
