@Lia1992M You can serve this rice with Kebab or sprinkle a seasoning called "Sumac" and make it tangy. Or else, you can make a Persian Stew called Chorosh to serve on top of it. The choices are endless. FOr recipes get my cookbook Persian Food from the Non-Persian bride or visit my Blog for more.
@kosherpersianfood We like to eat kebab with some onion, koreander and sumakh. And chorosh we eat with simple white rice. But i'll tell my mom to try your recipe for the rice this shabbath. So thanks :)
@Lia1992M I often serve this rice along with a Persian stew called Chorosh. There are a few recipes in my Blog. Also, this is the perfect rice to serve along Kebab. It is customary to sprinkle it with Sumac which is a delicious burgundy tangy flake.

I love persian type of rice cooking...my friend used to do it all the time during our university time. He did it without the potatoe, with the crunchy bottompart made from butter and partially used saffron. What memories...

You are very beautiful! As for picking the bugs out - i suggest an even better method: keep your rice in a sealed container so the bugs don't have a chance tto get there in the first place. That is much more hygienic and healthier because although you can pick out the bugs you can't clear the rice of their excerment!
@politicaltourist That is a fantastic idea. However, the rice you buy could already be contaminated with bugs at the early stage of gestation. Hence, completely invisible to the human eye. That is how bugs develop from rice that was even put in a clean airtight container. The method I use to check for bugs is the method that is brought down by the Rabbis in the Kosher world. While I agree the bug excrement is repulsive, by Kashurt standards it does not count as unkosher.

I did use saffron with a little bit of turmeric and sugar (ground together with mortar and pestle). I consulted a couple of different videos before yours, and they were all so complicated. @Leilataj85 The truth is that, instead of focusing on time, it is better to focus on the rice. Depending on the brand the rice might cook faster or slower. You do not have to wait for it to boil to start counting 5 minutes, but it would be best to always check the rice is "al dente"...that will be the ultimate sign the rice is ready to be drained.

@bostanipour You are right, this is Persian Rice. It is impossible to deny the huge influence of Arabic music, language and culture in Iran. I don't think there is a single Persian wedding I have been to that has not played a good and energetic Arabic tune (and some even bring belly dancer!) 'm sorry but I can't agree with you. There are words in Persian of Arabic root (though they sound and mean differently from the modern arabic equivalent word), I don't deny it.
However, stating that Persian culture and music had a "huge" influence of Arabic simply indicates you don't know much about Persian culture and music.
It's always easy to make such rough statements when you don't have enough knowledge about a subject but it rarely makes it true.

Find out a little about the traditional, folklore even pop music in Iran and you'll see.
@bostanipour Do not forget, this is not a Persian cooking, this is a Persian Jewish cooking somewhere outside of Iran. Do not be surprised to come across even some Italian music in the background

Do you wait for the water to come back to a boil after you've added the rice before you start timing the 5 minutes?
