If you bother watching the Fate Stay Night anime or play the FSN PC game then that goes without being told. It's really annoying that many people think it's Excallibur when it is in fact Calliburn.Excallibur is the sword that Saber currently wields. Calliburn is the sword she lost when she broke the code of chivalry.
It's overused because it's the only reliable super he has. His other normal one is slow and has to be blocked to do more than crap damage (meaning very few people fall for it twice...*ever*). The one he used in this video requires the Holy Grail.
Granted, I really *wish* people would use Grail supers more often...but then, I'm not a high-level player.

And dude, about the other move that does more than crap damage he have,otherwise known as K&B overedge, is unique.Most move won't do any damage if the enemy blocks it. Like Rider's Bellerophon. Also this move are meant when enemy starts going defensive a.k.a blocking. not when they going all out.
Nine Lives is his Grail super, meaning he needs the grail and a full magic circuit to use it. I wish they were used more (they're awesome-looking), but much of the time, reflect cancels and normal supers are more practical. And Azoth is just Shirou's grail attack versus Kirei.
My point about Crane Wing/Overedge is that they're meant to catch people off guard, mostly people who haven't seen them before. Someone who knows what's coming will stop blocking and dodge...or just let it hit them.
Yeah but if your low on health can you afford to lose more? And K&B super isn't meant for long range, it's for short range so that people have little to no time to "unblock."
Even if you're low on health, it's still better to get hit for 600 than 2500. And they're really only a little better at short range, since they're still two of the most telegraphed attacks in the game (Shirou's especially).
Although really, I think we're saying the same thing, just two different ways... ^_^

Shirou will not die when he traced Excalibur. He will only die when he use Excali-beam.
