    make sure you dont!

    it has a completely different effect- you dont want the pastry to rise from the flour- solely because of the butter layers

  • Julia Childs did it the Indian way. Butter being added with each folding. That's the way I do it too. But this is also a good way and less work. I will have to try it. I think you are a wonderful chef.

  • I just watched another video where the pastry chef used puff pastry for an apple turn over... the difference is he used only cold butter, and left it over night in the fridge... so is there any difference in the final product?

  • Lemon and butter are are actually introduced into the dough, because its WEAKENS the gluten network instead of strengthening it. Everything else is pretty such spot on though

  • @drunkter67 He actually said Lime juice or vinegar would strengthen the gluten ... not lemon or butter

  • @DarkNinjaChick Sorry, i misheard, however, oils and acid stills do the opposite of of strengthening the gluten network. If you don't believe me, you can check out for yourself by reading Harold McGee's book—On Food and Cooking, pg.525

    It makes more sense to weaken the gluten network than it does to strengthen it when it comes to making pastry, though, doesn't it? Other recipes I've seen for puff pastry seem to include lemon juice or some other acidic substance for that reason.

    In any case, this was a really helpful demonstration! I keep meaning to try making my own puff pastry.

  • Oh my God, you don't know how grateful I am of finally have found this recipe. I have never been into pastry or sweets, but I decided to go for something new and with age your tastes change but by the same token I do not want to spend to much time in something too difficult and when I found your recipe for puff pastry you made my day. I'll be practicing now, I have been told so many times I am a very good cook, maybe now I will become a good pastry maker.
