It looks like the nunchuck is connected by wiring not the plug.... is that true?

I don't think its connected at all. The cord is just coiled, and the remote is just sitting on top of the plug so you can't see it.

once i get my wii on christmas, im going to mod one of my wiimotes and nunchuck. im going to have the a button on the wiimote and the joystick on the nunchuck have pulsing red blue and green LEDs. then on the bottom of the wiimote where it shows the four players i am going to make all four of them have different color LEDs.(blue, red, orange, and green).
