  • @dirkdigla1914...in traditional Cajun gumbo, okra is a choice, not a requirement. In Creole gumbo, okra is pretty much required.

  • Gumbo means okra, you left okra out so what is this dish? File was only used when okra was out of season back in the old days before freezers. It is ground sasafras. Stick your finger in file powder and decide if you want that taste in your gumbo. Nope. File is still somehow lingering today in recipes, a buzz word maybe, but it is really bad idea to put it in any gumbo...

  • @lingbopper88, as someone who grew up in Cajun country, I can assure you that there is in fact gumbo without okra, and file is used whether or not okra is in season. Perhaps you're thinking of Creole gumbo, similar but dofferent. The only thing this chef did different than actual Cajun cooks was adding the file during the cooking process. Typically, file is sprinkled on the gumbo once it's in the bowl.

  • Ok, this is where being a New Orleans native comes in handy, you are not supposed to add the file until the gumbo is finished at the very end. If you try to bring it to a boil after you add the file, it can become stringy. Also, you can make any kind of gumbo you like, but traditionally okra is with seafood, and file is with chicken, but if you don't have okra, you can do file. We call the onion, bell pepper and celery the "holy trinity". But the gumbo looks good. New Orleans area adds tomato.
