Looks like a small rutabaga to me..never ate them raw,just cooked like taters. But his is beautiful. Look at the base when he 1st shows it,it has the purplish base of a rutabaga.

Well you have to look closer and review again and again it is not that hard but you need to practice it take time , basically i carve up side down.
