no cinnamon, and using a clear rum? blasphemy for a signature dessert. pretty sure it's supposed to be a cinnamon caramel sauce finished/flambeed with a gold or dark rum. of course with orange and lemon both, cinnamon would be a bit much, so choose one. prolly no need for a whole 1/2 fruit either. this dessert should come together very quickly, if you have to wait for your sauce to tighten up, you're wasting time. can't flaw the technique however. probably still tasted great.
