If not, you will need a very sharp knife. These will cook fairly fast as they are so thin. You should have them done in 5 to 6 minutes tops. Make sure your pan is really hot.

You need to heat the pan well, place the meat on the hot pan, sear one side and flip it. As soon as the other side is browned your meat is cooked. Remove it from the pan and let it sit. skirt steak is better...more tender...soaks up the flavors...my dad used that at our mexcian restaurant...and yes u need to leave some fat like another explained so the meat can be juicy...flank steak lacks that...it will end up tough
This is a horrible marinade, I stoped the video u are ruining perfectly good meat! The whole point too carne asada is that the cutt of meat is suppose too be thin yet have a good layer of fatt around the edges and some strips of fatt running through the meat. I don't lime my carne asada. If u got a good cutt of meat all u need is salt and peper and the natural taste of the fatt and meat is superb.

I like to keep my marinade simple. Lightly rub the meat with Chef Merito seasoning, add an ice cold beer, and a couple of lemons worth of juice.
