@rompecondon the flash freezes it because you can only see what is illuminated (for that very very small amount of time) because the rest of the room is dark. If the room was lit up, then it wouldn't work. Only because its dark does it work.

One thing to note, the lower the flash power setting the shorter the flash duration. So use as low of power as you can for the subject.

I never shoot full burst with the 7D when shooting high speed photography.

Yes, you can use AF first, if you have good light on the object you focusing on.

But it's easier just to use manual focus from the beginning, easy to forget switching back to manual.
