my guess is there is a short delay, maybe 10 seconds or so. And so if contestants start to say something they don't want to air, they put up that blank screen and piano music. But if you look around youtube, you can find videos where stuff gets out that the producers probably don't want out there.

Her husband is Leslie Moonves President and CEO of CBS.  Of course Dave is not being asked to interview the bosses wife, he's being asked to promote a CBS show that happens to be hosted by the bosses wife.
