one exception: the host is not always the one who orders (and hence)is presented with the wine. the person who orders the wine is the person who the wine is presented to.
Some wine is great with the Stelvin Closure, however there many wines that would not benefit from that type of closure. For example, if you have a bottle with a recommended bottle aging of 10-12 years before consumption, than a cork closure is the better solution. But there are many benefits to the "screw-cap" as you call it in the white wine category! Cheers!

Sometimes when I finish pouring some wine drips down the bottle. It's kind of humiliating when that happens.
Any advice on how to prevent that? I've seen some servers carry a cloth or they twist the bottle but what's the proper way?

i believe the twist is the proper way to take care of that...at least that's what my instructor taught us during professional beverage service

While pouring make sure your thumb is to the right of the label. Try not to block the view of the bottle's label.
